Kaddu Burfi Recipe
Ingredients:-
Bottle Gourd (Kaddu) – 750 gms, Full Cream Milk - 1 litre, Sugar – 300 gms, Elaichi Powder –1 Tablespoon, Khoya – 300 gms, Ghee – 5 to 6 Tablespoons, Dry Fruits (Almonds & Kaju)
Procedure:-
Grate the Bottle Gourd (kaddu) into fine pieces. Squeeze the grated bottle gourd till the water gets removed.
Add full cream milk is a vessel and put it on a gas stove in low flame. Add grated bottle gourd (kaddu) in the milk. Stir it continuously till it forms a thick paste.
In another pre-heated vessel, pour the ghee. Keep it on low flame. Add the bottle gourd (kaddu) and milk preparation in the ghee. Stir it for sometime. Add Khoya and sugar and continue stirring till the mixtures becomes thick and stops sticking to the vessel. Once it stops sticking to the vessel, the ingredient is ready.
Add Elaichi Powder and Dry Fruits and mix it well.
Grease the serving plate with ghee and spread the preparation in thick layer. Freeze it for about 2 hours. Cut into desired pieces. Garnish the cut pieces with cherry.
The Kaddu Burfi is ready to serve.
